I had recently bought the cook book fra Bistro Boheme and I decided that it was time to test some of the recipes. I started of with roasted porc rib roast a la boulangére

The recipe is fairly simpel but has to be made with good decent porc rib roast and some good potatoes.

I started off peeling 5 big potatoes and slicing 1/2 cm thick slices. Then I sliced 3 onions normal size in the same size slices as potatoes. I washed a big bundle of fresh thyme and sliced 5 cloves of garlic.

All went in a thick-bottomed pot. I added 1 liter of calf stock and placed the rib roast on top with the rind facing downwards. All is topped with a couple of bay leaves and black pepper.  Place the pot in the oven at a temperature of 200 degrees celcius. Let the pot roast for 10 minutes and then turn the roast so the rind is facing upwards. The put it back in the oven for 50 minutes. At the end of the 5+ minutes turn on the grill if the rinds are not crisp.

Serve with some good bread and a crisp green salad.
