Reliving old school cooking with my grandmothers iron for patties I was asked to share the recipe, and I am glad to, but I actually had som inspiration from Masterchef Denmark.
the recipe I used was:
125 g of flour
3/4 dl dark beer
1 1/4 dl water
1/2 tsp sugar
1 tbsp olive oil
oil for frying. I used grapeseed oil.
AND you HAVE to have a Iron for patties as shown in the video.
Mix all of the above together and let the frying oil become 170 degrees hot. Let he iron sit in to until hot about 10 minutes. Then dip the iron in the batter – best done if the batter is in two glasses and the put in into the oil. Let them rest in the oil for about 3 minutes and the tap he iron over a plate with kitchen towel and the should fall of an be nice and crisp.
I filled the little buggers with a salad of roasted chicken, celery, tarragon, diced green apples, chervil, thyme, and a mushroom mayo and garnished it with bacon. A lighter version of a classic Danish Dish.
