I recently hosted a pop up dinner in my garden. The theme was Fire and Spice.

My vision was to incorporate nature and autumn in my dinner. I was so lucky that the weather was good and the temperature was reasonable. I set the table inside a small tent to make sure, that the guest were sheltered from the wind and cold.

The guests started with appetizers:

The menu was set from the produce and cooking style at this time of year;


– Toast melba buttered with smoked soft cheese with butter roasted chanterelles and porcinis with lemon zest and thyme sprinkled with lemon olive oil.

– Rye bread chips with confit de canard mixed with sumak and chopped raspberries drizzled with 30 year old balsamico

The starters were served with a gorgeous drink –  a Bramble.

The starter was mussels in cider with thyme, little apple squares and cream served with bread and butter. Served with a wonderful demi-sec cider from Spain.

The guests then had a little sorbet made from rosé peppercorns, star anis and long black peppercorns.

The main course was made with inspiration from a dinner at Restaurant Ravelinen in Copenhagen. It was dark beer braised veal shanks with butter steamed salsify roots, dressed with roasted breads chunks, fresh tarragon and drizzled with olive oil. For the main course the guest had the option of having served white wines  from Argillae Winery or a red wine from Fabios Vine.

The last palate cleanser was a jerusalem artichoke and long black peppercorn sorbet.

For dessert my very good friend Kim had made a curdled cream with Johan Bülow licorice, bucktorn jelly and muesli decorated with bronze fennel.
