So getting ready for New Years Eve I have been spending time in the kitchen pondering over what to make for a small appetizer for new years eve. I love mussels and my daughter (age 5) loves blodsausage so I decided to make those two best friends:-)

I started off with following ingredients:

A net of mussels, 1 lime, homemade saffron mayo, french blod sausage and parsley.

In a pan with oliveoil I roasted of a clove of garlic, a small onion chopped finely and a carrot coarsely chopped. I cooked of the pan with a bit of gin and the added some water. Put a lid on a let the mussels steam for about 5 minutes. Then let the mussels cool of and now they are ready for action:-)

While the mussels are cooking make the mayo:

1 large egg yolk – some times I use two
1 1/2 teaspoons fresh lemon juice
1 teaspoon white wine vinegar
1/4 teaspoon Dijon mustard
1/2 teaspoon salt plus more to taste
3/4 cup grapeseed oil

Start by whisking the yolk with the mustard and then and the lemonjuice and vinegar and then ad the oil. Start by adding drops and the more and more as you whisk and the mayo sets.

Once you have the mayo ready add some crushed garlic and a good pinch of saffron dissolved in som warmed white wine. Season with salt and pepper. Now you have a saffron mayo.

I bought a french blodsausage with apples in it. My family is not crazy about the danish blodsausage because it is very sweet, but I can easily be used here. Crumble the blodsausage and roast it in butter in a pan until crisp.

Wash some parsley and dry it.
