My family loves rabbit and I make a lot of dishes with rabbit. Today I made a french dish with rabbit.
I had half a rabbit in the fridge and some bacon. I sliced up 5 onions 1/2 cm thick and sliced 5 tomatoes in thick slices. Half of it went into a heavy-bottomed pot and the rabbit was placed upon the vegetables. 3 thick slices of bacon is layed over the rabbit which is topped with the rest of the onions and the tomatoes. Then a big fresh bunch og thyme and rosemary is added and 5 fresh bayleaves. pepper is added and 5 dl of white wine. Everything goes into the oven at 190 degrees celcius for one hour with the lid on and after that one hour without the lid. Serve with a good green salad. Don’t throw away the kidneys, heart and liver of the rabbit. Roast it in some butter and season with salt pepper and maybe some lemon and sage. It is a lovely little dish and my kids love it.
